La Vie En Rose







I am very pleased to present this Heirloom Dress set in coordination with sweet Wendy from madkatdesigns. Wendy invited me to join her in a guest launch with WisteriaLane and I had a blast with this launch - it was so wonderful to be able to do some hand-embroidery again :). The best part was listening to Louis Armstrong and Frank Sinatra playing in the background as I did the hand-stitching. Awwwweee...pure heaven!!! :)

Catie and Austin at Meet the Teacher Night :)






Sharing some pics from Catie(entering 2nd grade) and Austin's (entering K) "Meet the Teacher" Night on 8/21/09 :) They both started school on August 24th and Austin said the first day that he liked it, but "it took too long," lol. Catie loves her new teacher! She's shown above with her 1st grade teacher (blonde hair) and the other pic with Catie and her is her 2nd grade teacher.

Low Fat Green Chile Chicken Enchiladas







Last night, Catie and I tried a new low fat version of Green Chile/Soup Enchiladas...it's a quick and easy recipe and most of it cooks in the crockpot and/or oven :) Here's how we made it:



Ingredients:

2-4 frozen chicken breasts, depending on the size of your family

1 large jar of Green Chile Soup or Stew (33 oz)

4 oz Low-fat shredded Mexican Cheese

3/4 cup low-fat Sour Cream

12-18 corn tortillas



1. Place frozen chicken in CrockPot and pour 1/3 of the Green Chili Stew/Soup over the chicken, place remainder of green chili in refrig until ready to use later.

2. Cook on low for 7-8 hours, or you can do high for 4 to 4 1/2 hours. If you have fresh chicken, half the crockpot cooking time.

3. When Chicken is ready, remove from crockpot and shred into large chunks/pieces.

4. Pour remainder of Green Chili Stew into a 8x10 or 8x14 pan, depending on how many enchiladas you are making.

5. Fill each tortilla with a small amount of the chicken and top with a spoonful of sour cream. Top with shredded cheese.

6. Roll each tortilla and then place into the pan.

7. Top rolled tortillas with green chili stew that is left over in the crockpot.

8. Cook at 375 degrees for 20-25 minutes and then pull out and top with remainder of unused shredded Mexican Cheese. Then continue to cook another 10-15 minutes until the cheese is melted.



For us, we left out the sour cream because my husband doesn't really care for it. I added it on top of my enchiladas instead ;)




Alternates for this recipe that we'll probably try soon:

1. Follow crockpot instructions, but instead of making enchiladas, make green chili "fajitas" after shredding chicken. The chicken is cooked already and ready to go, so less work than the enchiladas :)

2. Follow crockpot instructions, and just serve full chicken breasts over a bed of rice.

Both of these alternatives will allow for only using 1/3 of a large jar of the green chili stew, so would be cheaper as you could use the stew jar 2-3x.


WARNING: Your house will smell incredible for hours and it will make you hungry all day, lol...


**We used Cookwell & Company's 2 step Green Chili Stew which we bought at HEB Grocery here in Texas. This stuff is fabulous and only has 3g of Sugar per serving!! The back of the jar has basically the same enchilada recipe on the label, but it's not a low fat or crockpot version ;)

On a semi vacation - stop in Colorado Springs





My family and I are in South Dakota visiting my inlaws - we drove from Texas, so it was a loooooong drive!! LOL But, we made a short stop in Colorado Springs and visited the Cheyenne Mountain Zoo. If you're ever in the area, I highly recommend this zoo - the views from the mountains are spectacular! Just bring comfy walking shoes as you will be walking STEEP hills, lol!! Here are some pics, including Catie and Austin feeding the Giraffes!! :)

RAH -t- DAH! Catie goes to the DCC camp







Fun, fun, fun under the hot Texas sun!

Since daddy had work-education courses to complete most of this last week in Dallas, I took the opportunity to take Catie to an absolutely unique opportunity to cheer, dance, and do crafts with the Dallas Cowboy Cheerleaders! It was either that, be stuck in a hotel room, drive all over Dallas for 3 days to different things, or go shopping all day, every day, lol, so I gave Catie the choice and you know now what she chose...

For those of y'all who don't know, I grew up about 20 minutes south of downtown Dallas...in my elementary to high school years, it really wasn't a suburb of Dallas. Now, my hometown, where I was born and reared for 18 years of my life - is really getting close to a suburb of Dallas. Maybe in the next 5-10 years, it definitely will be. Wow - progress, huh?

So, gotta love those Cowboys and their cheerleaders!!!

I gotta say - these ladies are absolutely so classy and sweethearts!

Out and About in North Dallas area



We just recently went up to Dallas this past week so my hubby could complete some of his continuing education credits. On the last day, my sister and I stumbled upon a wonderful deli called "Hanging Out" - such fresh an wonderful food!! We were almost done with our sandwhiches when we saw the desert menu...a little pg-13, but kinda funny...

Sharing birthday pics 6 weeks late, lol




Everything has been crazy since the first of May in our house, so six weeks after our birthday, I can finally share pics of Catie and my b'day cake. We only put 6 candles on the cake - the rule is since I had Catie on my 30th b-day, that I get the same number of candles as she does (since I'm 36). I really love the cake Catie picked this year for us, lol..

I hope to catch-up on a lot of things today and the next few days, so a bombardment of posts?? :)

Catie really liked the Circus Event at her school




So she decided to "tame" her brother, the "monkey," in a faux Circus, at-home-event this past week. Check-out her outfit...she dressed herself to be the ringleader, lol.

The Greatest Little Circus in Texas...




Catie's Kindergarten Class had a "The Greatest Little Circus in Texas" Show this morning and I took some pics to share of the event. My camera battery died about 1/2 way through the show, so I didn't get all the show's pics - Luckily for me, Catie was in the first 1/3rd of the show :).

Her daddy said that she was turning around in the opposite direction as everyone else - I didn't notice as I was too busy clicking away, lol...

How Precious is this???







Aren't these sisters adorable?? These cuties are Sarah and Marisa, little sweeties of Stacey.

I was so excited to be able to make matching sister sets for them (and a matching mommy skirt for Stacey)...and couldn't wait to share pics of these sisters when Stacey sent them. The last pic is of Marisa alone - isn't she pretty in pink??
