Low Fat Green Chile Chicken Enchiladas







Last night, Catie and I tried a new low fat version of Green Chile/Soup Enchiladas...it's a quick and easy recipe and most of it cooks in the crockpot and/or oven :) Here's how we made it:



Ingredients:

2-4 frozen chicken breasts, depending on the size of your family

1 large jar of Green Chile Soup or Stew (33 oz)

4 oz Low-fat shredded Mexican Cheese

3/4 cup low-fat Sour Cream

12-18 corn tortillas



1. Place frozen chicken in CrockPot and pour 1/3 of the Green Chili Stew/Soup over the chicken, place remainder of green chili in refrig until ready to use later.

2. Cook on low for 7-8 hours, or you can do high for 4 to 4 1/2 hours. If you have fresh chicken, half the crockpot cooking time.

3. When Chicken is ready, remove from crockpot and shred into large chunks/pieces.

4. Pour remainder of Green Chili Stew into a 8x10 or 8x14 pan, depending on how many enchiladas you are making.

5. Fill each tortilla with a small amount of the chicken and top with a spoonful of sour cream. Top with shredded cheese.

6. Roll each tortilla and then place into the pan.

7. Top rolled tortillas with green chili stew that is left over in the crockpot.

8. Cook at 375 degrees for 20-25 minutes and then pull out and top with remainder of unused shredded Mexican Cheese. Then continue to cook another 10-15 minutes until the cheese is melted.



For us, we left out the sour cream because my husband doesn't really care for it. I added it on top of my enchiladas instead ;)




Alternates for this recipe that we'll probably try soon:

1. Follow crockpot instructions, but instead of making enchiladas, make green chili "fajitas" after shredding chicken. The chicken is cooked already and ready to go, so less work than the enchiladas :)

2. Follow crockpot instructions, and just serve full chicken breasts over a bed of rice.

Both of these alternatives will allow for only using 1/3 of a large jar of the green chili stew, so would be cheaper as you could use the stew jar 2-3x.


WARNING: Your house will smell incredible for hours and it will make you hungry all day, lol...


**We used Cookwell & Company's 2 step Green Chili Stew which we bought at HEB Grocery here in Texas. This stuff is fabulous and only has 3g of Sugar per serving!! The back of the jar has basically the same enchilada recipe on the label, but it's not a low fat or crockpot version ;)
